Garlic Roasted Eggplant & Mush

Ingredients
  1. 1 eggplant cubed
  2. 2 cups sliced mushrooms
  3. 2 teaspoon minced garlic
  4. Salt & pepper to taste
  5. Oregano to taste
  6. Oil or pam spray
Instructions
  1. Spray a baking sheet with non-stick cooking oil.
  2. Spread the mushrooms and cubed eggplant out on the sheet. Sprinkle with minced garlic, salt, pepper and oregano to taste
  3. Bake at 450 for 15-25 minutes or until the eggplant and mushrooms are tender
